    Phillip’s Smokey BBQ Ribs Recipe

    Ingredients

    • 2 racks pork spare ribs
    • 4 tbsp dark brown sugar
    • 5 tbsp salt
    • 1 tbsp ground ginger
    • 5 tbsp ground black pepper
    • 2 tbsp paprika
    • 1 tsp chilli powder
    • 2 tbsp ground cumin
    • 2 tbsp ground coriander
    • 240ml tomato sauce
    • 2 tbsp Dijon mustard
    • 50ml orange juice
    • 5 tbsp cider vinegar
    • 1 tsp liquid smoke

    Method

    1. Take a bowl and mix together all the ingredients for the dry spice rub
    2. Rub the dry spice mix into the rack (s) of pork ribs
    3. Preheat the oven to 100c and slowly cook the ribs in the oven for about 3 hours
    4. For the sauce: mix the ingredients together in a small bowl and put to one side
    5. Remove the ribs from the oven and then flash the ribs on the barbecue to crisp further. Coat the ribs in the sauce and serve, putting the remaining sauce into a jug.

    Gennaro “Gino” D’Acampo is an Italian celebrity chef and media personality based in the United Kingdom, best known for his food-focused television shows and cookbooks.

    D’Acampo rose to fame as a regular chef on the ITV show This Morning. He has since presented cookery programmes including Let’s Do Lunch, There’s No Taste Like Home and Gino’s Italian Escape.

    In June 2020, It was announced that D’Acampo would be the presenter of a brand new series of Family Fortunes on ITV 18 years later than the last series.
