Levi Roots is infamous in the UK for having appeared on a television show and successfully convinced a “Dragon’s Den” panel of business leaders to back his Caribbean sauce venture.
An accomplished reggae music artist, the London personality went on to secure orders from a major UK supermarket chain, Sainsbury’s, and he even released a single based on the sauce, giving the proceeds to Comic Relief.
Here, Mr Roots gives away a few Caribbean secrets to those looking to get some jerk into the weekend’s barbecue:

There’s nothing I love more than cooking up food for my friends and family in the heat of the summer sun, but I know it’s not always easy to keep barbeque food new and exciting.
“With this in mind, I’ve created two tasty new recipes using my special, but not so secret, ingredient…you know it, Reggae Reggae Sauce! You’ll need a little preparation time for these fabulocious recipes, but I promise you won’t fail to impress when you dish these babies out.

Chicken, Sweet Potato & Spinach Patties
Yield: Serves 4
Ingredients
2 Chicken Breasts
½ large bag Sweet Potatoes – peeled and diced
1 Jacket Potato – peeled and diced
100g 100g Spinach – chopped
½ Red onion – finely diced
1 tbsp olive oil
2 tbsp vegetable oil
1 Egg
2 crusty rolls – made into breadcrumbs
To taste Salt & Pepper
8 tbsp Reggae Reggae Sauce
Cooking Directions
Boil the potatoes together and then mash.
In a food processor blend the chicken until smooth.
Heat the olive oil in a pan and fry off the onion then add the spinach to wilt.
Mix with all the other ingredients until mixed well. Make into 8 patties
Place on the barbeque and grill for 10 minutes on each side until golden brown
Reggae Reggae Mint Dip

5 tbsp Low Fat Yoghurt
½ Cucumber – finely diced
Sprig mint – chopped
2 tbsp Reggae Reggae Sauce
Cooking Directions
Mix the yoghurt, Reggae Reggae Sauce, cucumber and mint and serve with Levi Root’s Chicken, Sweet Potato & Spinach Patties
