Two new flavours of Texas Pete Hot Sauce will be unveiled at Vegas Uncork’d on 5th – 8th May 2011 in Las Vegas. Fiery Sweet Wing Sauce and Chipotle Hot Sauce combine the sweetness of molasses and honey to create a perfect cooking sauce for the barbecue season. The new products will hit the shelves soon after the Vegas food festival.

Chef Tim Grandinetti will take to the stage as part of the celebrations to demonstrate recipes that use the new sauces. Chef Grandinetti took the position of Executive Chef & Director of Farmstead Operations at Overlook Farm in October 2009. Before that he was Regional Executive Chef of the Twin City Quarter, based in Winston Salem, North Carolina, and was head chef at the Renaissance Grand in Downtown St. Louis.

In 2006, Chef Grandinetti represented Missouri as a delegate of the Slow Food’s Terra Madre program in Turin, Italy. A year later, as part of a partnership between the American Culinary Federation and the U.S. Navy, he was invited to Japan to facilitate culinary training for the U.S. Navy and Japanese cooks. While overseas, he completed a stage at the Renaissance Tokyo Ginza Hotel, where he received world-renowned culinary training.

He said of hot sauce in American cooking:

“The new Chipotle and Fiery Sweet flavors from Texas Pete® provide some great flavors to bring new life to old recipes and wow your friends with new inventions the next time you entertain. Hot sauce shouldn’t be hiding in the cupboard and used only on wings. I’ve created five new gourmet recipes that I’ll be preparing at Vegas Uncork’d that should inspire even the most inexperienced cook to be more creative with their condiments.”

Here, Chef Grandinetti shares a recipe for chicken which utilises Texas Pete Fiery Sweet Sauce.

Texas Pete Fiery Sweet Mango Orange Salsa

Ingredients

  • 1 Orange, segmented
  • 1/4 cup orange juice
  • 1 Mango diced
  • 2 teaspoons Shredded Coconut
  • 1/4 cup Red onion, chopped
  • 1/4 cup Cilantro, chopped
  • 2 tablespoons jalapeno, minced
  • 2 tablespoons Texas Pete Fiery Sweet Sauce
  • 2 tablespoons Lime juice
  • Pinch Cayenne Pepper

Cooking Directions

  1. Combine all ingredients.
  2. Allow flavours to infuse for 45 minutes to an hour.

Herb-Crusted Chicken Brochettes

Ingredients

  • 1lb Boneless Chicken Tenders
  • 1 cup All-purpose flour
  • 3 Eggs
  • 1 cup Panko Breadcrumbs

Cooking Directions

  1. Combine breadcrumbs and flour.
  2. Beat eggs in a shallow dish.
  3. Dip chicken in eggs and coat with breadcrumb mixture.
  4. In a cast iron skillet, heat 4 tablespoons of vegetable oil over medium high heat.
  5. Pan fry chicken, flipping once until golden brown approximately 8-10 minutes.

Wrap chicken and salsa in lettuce leaves and serve.
