Giant Hash Brown
Ingredients
- Large white onion
- Waxy potatoes
- Salt
- Pepper
- Cayenne Pepper
- Olive Oil
- 4 Eggs
Method
- Grate onion and peeled potatoes into a colander.
- Add salt, pepper & cayenne pepper
- Squeeze as much liquid as possible out
- Place into a frying pan of heated olive oil and flatten
- Add butter at the sides for a crispy edge
- Turn out onto a plate and slide back in to the pan (for easy turning)
- Crack eggs on top, cayenne pepper on top
- Place pan into a pre-heated oevn for 6-8 minutes
- Heat a new frying pan, add olive oil, brown sugar, salt, pepper and butter
- Add a pack of bacon & fry / glaze
- Serve has brown & baked eggs with glazed bacon on top
