Lisa Faulkner’s One Pot Salmon Pasta Recipe
Ingredients
- 125g pine nuts
- 125g parmesan
- 1 large bunch of fresh basil leaves
- 1 clove garlic
- 200ml olive oil
- Lemon juice
- pepper
- 250g shell pasta
- 150g green beans chopped into 2 cm pieces
- 100g baby leaf spinach
- 1 clove garlic
- 4 spring onions thinly sliced
- 2 good tbsp olive oil
- 1 veg stock cube
- Juice and zest of 1 lemon
- 750ml water
- Salt and pepper
- Parmesan or grana Padano to serve
- Salmon (cubed)
Method
- Whizz all the dry ingredients together in a food processor, then add the oil and a squeeze of lemon
- Put all the ingredients in a pan and cook for about 15 minutes stirring regularly, add the cubed salmon and cook through, then serve.
