Gok Wan’s Singapore Noodles Recipe

Ingredients

  • Onions
  • Spring Onions
  • Garlic
  • Chillies
  • Fresh Lime
  • Medium curry Powder
  • Fresh vegetables (stir fry veg – peppers, carrots, mange tout)
  • Vermicelli Noodles (vacuum packed)
  • 2 beaten eggs

Method

  1. Heat some oil in a wok as hot as it will go.
  2. Add the onions, and brown them. Put the veg in. Put 2 cloves of chopped garlic in.
  3. Add spring onions and fresh chillies.
  4. Optional – fish sauce, rice wine, light soy sauce
  5. Stir fry your added flavour back through.
  6. Add the medium curry powder and stir fry it through.
  7. Add the two beaten eggs and scramble these in your wok.
  8. Once you are happy it is cooked, move the food to the edge of the wok, and put your noodles into the centre, then mix together, taking care not to stick the noodles to the wok.
  9. Optional – Add some pepper and a pinch of sugar.
  10. Finally, squeeze in half a lime mix one last time, and serve.
  11. Add spring onions, fresh chilli and some cooked chicken (or similar) to go with your noodles.
